Eggs Boissiere Recipe


  • 2 eggs
  • Red wine
  • Water
  • 2 slices French bread, buttered
  • Feta cheese, crumbled
  • Tomato confit, diced
  • Chives, chopped
  • Lemon vinaigrette
  • Salt, pepper


  1. Bring mixture of half red wine, half water to a simmer
  2. Place both eggs into wine
  3. Toast bread in 400 degree oven while eggs are poaching, just a couple of minutes
  4. When eggs are ready, place each on top of a slice of toasted bread
  5. Season eggs with salt and pepper
  6. Garnish with feta, tomato and chives
  7. Drizzle dish with lemon vinaigrette
