8 large Idaho potatoes
diced, boiled, drained, rinsed
6 oz Philadelphia cream cheese
1 cup sour cream
1 heaping tsp minced garlic
garlic salt to taste
black pepper to taste
shredded parmesan cheese
Prepare potatoes as suggested. Mix together remaining ingredients (not parmesan) and mash well with electric mixer, removing lumps.
Spray a 9 x 11 baking dish with Pam and add mashed potato mixture. Top with shredded parmesan cheese.
Bake 350 degrees for one hour. Once the topping is golden brown, add aluminum foil for the remainder of the baking time.
