Wild Rice Salad recipe


1 cup Uncle Ben's Long Grain and Wild Rice – cook according to box

Alternative: Use a 2:1 ratio of long grain, brown or white rice to wild rice. Cook rice according to directions on box.

¼ cup roasted red peppers

1 pt cherry tomatoes

8-10 asparagus spears (use frozen, thawed slightly)

¼ cup red onion minced

½ jalapeno minced

1 small jar capers, drained

2-3 stalks celery, cut small half moons

½ bag of shredded carrots

½ cup slivered almonds, toasted


For the dressing:

Here are some options:

¼ cup olive oil

2-4 T red wine, cider, champagne or any vinegar will work

1 ½ tsp sugar

1-2 Tbsp sesame oil, dark (using the dark oil has a fuller roasted flavor) * this oil has a strong flavor, use as you like.

You may also like to use lemon and or lime juice for the acid, instead of vinegar, and omit the sesame oil. 

You also can add fresh herbs in your vinaigrettes like parsley, basil, rosemary and thyme.
