2 zucchini squash
1 lg fresh tomato (peeled)
1 sm vidalia onion (chopped)
1/2 small green bell pepper diced
1 tsp fresh ground black pepper
1/2 tsp salt
2 tsp italian seasoning
1/2c fresh corn (optional)
fresh okra optional
Slice the zucchini squash into 1/4 in slices - peeled or not peeled your choice. Add all the other ingredients and boil over medium hear for 10 to 15 minutes. Squash should be slightly crisp to the bite.
Before serving, add 1-1/2 tbsp butter or margarine. Serve as vegetable side with any favorite
meat dish. Good served over rice.
