Eileen's Cheesy Potatoes Recipe


20 oz pack of shredded hash browns or 8 medium potatoes grated

Can of Cream of Mushroom or Cream of chicken soup

1 ½ cups sour cream

¼ cup margarine (melted)

3 Tbsp or 1 small onion chopped very fine

2 cups shredded Colby-Monterey Jack Cheese

Salt & Pepper to taste



Butter or spray 9x13 inch pan.

Mix Soup, sour cream, margarine, onion, salt, pepper and 1 ½ cups of cheese with food processor or by hand.

Mix in Potatoes

Top with ½ cup of cheese

Bake at 350 degrees for about 30 minutes or until golden brown
