Chef Meg's Salmon & Soba Noodles

Salmon and Soba Noodles

Serves 1

4-5 ounces wild caught salmon

1 teaspoon sesame oil

1/3 bunch asparagus, trimmed and grilled

1 1/2 cup soba noodles, cooked

1 tablespoon Thai peanut sauce, warmed

3 scallions, sliced on angle

2 tablespoon red cabbage, shredded

  • Grill fish over moderate heat until it flakes, about 8 minutes.
  • Cut cooked asparagus into 1-2 inch pieces then toss with remaining ingredients.  Serve fish over noodles.
