Panko Crusted Chicken Breast with Lemon

Serves 4

4 boneless, skinless chicken breasts

Salt and pepper

4 Tablespoons melted butter

¼ cup panko crumbs

2 Tablespoons chopped fresh parsley

2 Tablespoons chopped shallots

1 teaspoon finely grated garlic

1 lemon, thinly sliced


Preheat oven to 375F.

Season chicken breasts with salt and pepper.

Pour 3 tablespoons melted butter into baking dish.

Add chicken and turn to coat in butter.

Combine panko crumbs, parsley, shallots and garlic.

Spoon over chicken.

Drizzle with remaining butter.

Place lemon slices on top of chicken.

Bake for 25 minutes.
