Jicama Salad

1 – larger jicama

1 cup yellow pepper, small dice

1 ½ cups roasted red pepper, small dice

1 cup diced English cucumber, de seeded and small dice

½ - ¾ cup radishes, small dice    

1 – 12oz can mandarin oranges

¼ cup mint and parsley each, chopped fine

Dressing:

¼ cup lime juice

2 tablespoons honey

2 teaspoons mustard

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon cumin

½ teaspoon salt

¼ teaspoon pepper

½ cup oil

Cut off outer hard skin on jicama, process other vegetables as stated above. For the dressing, add all ingredients into mason jar and shake until thick. Pour desired amount of dressing on salad, I eyeball it just enough to coat.
