Panzanella:  Italian Bread Salad


6 cups rustic bread cut into 1 inch pieces (Italian or French bread)

1/2 cup extra virgin oil, divided

3 tablespoons red wine vinegar

1 clove garlic

1 pound roma tomatoes, cored and seeded

1 English cucumber, diced

1 shallot, diced

1/4 cup basil, shredded

2 tablespoon parsley, chopped


Preheat oven to 400 degrees.  Toss bread with 2 tablespoons of the oil.  Season with salt and pepper.  Bake until light brown in color, about 10 minutes.  Cool.  Place vinegar into a small dish, whisk in remaining oil to create vinaigrette.  Toss all ingredients into a large bowl along with the vinaigrette
