4 lb. apples, peeled, cored & sliced
2 c. apple juice
2 ½ c. sugar
1 ½ tsp. cinnamon
½ tsp. allspice
¼ tsp. ground cloves
Bring apples and apple juice to a boil over medium heat. Reduce the heat, cover and cook until apples are soft, about 25 minutes. Remove from heat. Press the apples and juice through a food mill or use a blender and blend until smooth. Return smooth apple mixture to pan on stove. Add sugar, cinnamon, allspice and ground cloves. Stir to combine over medium low heat, then increase the heat to medium. When the mixture starts to bubble, reduce the heat and cook slowly until thick enough to round up on a spoon. As mixture thickens, stir frequently to prevent sticking.
Remove from heat and ladle hot apple butter into ½ pint canning jars, leaving ¼ inch head space. Wipe rims. Secure two-piece caps. Process 10 minutes in a hot water bath canner. Yield: 5 half-pint jars plus a little extra to taste.

Try this apple butter in a gourmet peanut butter sandwich: Spread peanut butter on one side of a piece of whole grain bread, apple butter on the side of another piece of whole grain bread, sprinkle 2 Tbsp. of raisins on top of the peanut butter, put the 2 slices of bread together, cut in half if desired and enjoy!
