(FOX19) - These burgers are a summer staple at my house. My husband and son make them all the time. You can stuff them with any kind of cheese you'd like, but mozzarella gets nice and runny.
1 ½ lb ground beef sirloin
¼ cup finely diced red onion
¼ cup chopped capers
¼ cup dijon mustard
2 egg yolks
8 sun-dried tomato halves
1 tsp pepper
6 Tbsp finely chopped fresh mozzarella
Combine all ingredients except the cheese in a bowl.
Divide the mixture in half and make 4 patties out of each half.
Make a small indentation in the center of each patty.
Place some of the cheese in each.
Top with the remaining patties.
