Rosemary Chicken Skewers

These skewers make a nice change from the more traditional kebabs.  They are always popular with both kids and adults.

4- 6 oz Boneless Chicken Breasts, cut into1 inch cubes

4 Large Rosemary Sprigs

2 Tbs Lemon Herb Seasoning

3 Tbs Lemon Zest and Juice

¼ Cup Olive Oil plus extra for drizzling on vegetables

1 Tbs Kosher Salt

½ Tbs Black Pepper

½ Large Red Onion / Cut in Wedges

12 Cherry or Grape Tomatoes


Remove Rosemary from sprig starting about one inch down the sprig.

Finely chop the removed Rosemary.

Marinade chicken cubes with the chopped Rosemary, lemon and herb seasoning, lemon juice and zest, Olive Oil, salt and pepper for one hour

Drizzle vegetables with remaining Olive Oil.

Assemble on skewers.

Grill for 10 minutes turning frequently, until done.
