White Sweet Onion Soup

6 medium size sweet onions sliced thin (Vidalia or Walla Walla)

3Tbs olive oil

Pinch of Salt to taste

1 sprig of Thyme picked

Ā½ cup of dry white wine

8 oz cream

Sweat sliced sweet onions in olive oil over low heat until tender about 45 minutes. Do not let the onions get any color. Add Thyme then the white wine and simmer until the wine is reduced out. Add cream and simmer on low for 10 minutes until the onions are very tender. Let cool off until warm and place the contents of the pot in a blender and puree. Add a little water or stock if the soup is a little thick and adjust the seasoning with salt and a squeeze of lemon juice if handy.

This is a great versatile soup base that you can garnish with anything from fresh cut herbs, hot sauce, corn or even bacon.
