Chef Meg's Beach Towel Rum

Makes 2 Beverages

4 ounces white rum, divided

3 ounces simple syrup, divided

1 oz. fresh lime juice

10 strawberries, hulled and quartered

1/2 oz. heavy cream

1 banana, sliced

  • Puree in a blender 2 ounces of the rum, 1.5 ounces of syrup, .5 ounces lime juice, strawberries, and 1 1/2 cups of ice until smooth.
  • Pour equal amounts into 2 tall glasses.
  • Puree in a blender the remaining 2 ounces of rum, 1.5 ounces of syrup, and lime juice.  Add in cream and banana, puree until smooth.
  • Pour mixture over strawberry layer.
  • Serve with a straw.

Simple Syrup

1/2 cup water

1/2 cup sugar

In a medium saucepan combine sugar and water.

Bring to a boil, stirring, until sugar has dissolved. Allow to cool.
