Flat Iron Steak Tacos

Serves 4

4 cups red cabbage, shredded

2 limes, zested and juiced

1 tablespoon olive oil

Salt and pepper to taste

12 ounces flat iron steak

1/2 teaspoon cumin, ground

8 (6 inch) flour tortillas

1 cup salsa Verde

8 ounces white cheddar cheese, shredded

  • Combine cabbage, lime zest and juice, olive oil and salt and pepper into a large mixing bowl.
  • Preheat grill to moderate heat.
  • Pat steak dry with paper towels.
  • Drizzle with olive oil or pan spray.  Season with cumin, salt and pepper.  Grill steak to desired doneness.  Remove from grill- rest 5 minutes.  Slice into thin strips.
  • Warm tortillas in microwave or on grill.
  • Assemble tortillas.
