Lobster Bisque from Kenyatta Smith

Chef and Cincinnati firefighter Kenyatta Smith makes a mean lobster bisque. This recipe is featured in his book Rescupies. 

  • 1 pound lobster meat
  • 6 tablespoons unsalted butter
  • 2 quarts half and half
  • 1/2 cup chopped shallots
  • 1 tsp red pepper
  • 1 tbsp paprika
  • 1 tbsp nutmeg
  • 1 cup dry sherry
  • 6 oz Tomato paste
  • 3/4 cup flour
  • 4 garlic cloves, minced
  • 1 tablespoon white pepper
  • 2 tablespoons sea salt

Slowly heat half and half in small pot on low heat. Melt butter and saute shallots, garlic and spices in large cooking pon on medium heat. Stir in tomato paste, whisk in flower, creating a paste. Whisk in sherry. Combine half and half into mixture, whisking constantly. Add lobster. Heat low stirring often, 5-10 minutes. Garnish with parsley and extra lobster meat.

Serve immediately.
