Recipe: Jambalaya; 10th annual Mardi Gras at Findlay Market

CINCINNATI, OH (FOX19) -

Chef Meredith Trombly of Fresh Table at Findlay Market offers this recipe for jambalaya just in time for Mardi Gras.

  • 1 cup White Onion, medium dice
  • 2 cups Tomato, medium dice
  • 2 cups Red & Green Bell Peppers, rough chop
  • 1 cup Celery, medium dice
  • 1/8 cup Parsley, rough chop
  • 2 tablespoons Garlic, chopped
  • 1/8 cup Dried Thyme
  • 1/8 cup Dried Basil
  • 1 tablespoon Dried Oregano
  • 1 teaspoon White Pepper
  • 1 teaspoon Black Pepper
  • 1 teaspoon Cayenne Pepper
  • 1 Liter Chicken Broth
  • 1/8 cup Chicken Base
  • 1 cup Tomato Paste
  • ½# Ground Andouille Sausage
  • 1 cup Water
  • Hot Sauce to taste
  • Salt to taste

Combine all ingredients in a large stockpot and simmer for 2 hours, or until desired consistency.  Serve over hot white rice.

Findlay Market's 10th annual Mardi Gras is 10 a.m. to 4 p.m. Sunday.

Here's the lineup of music:

Lagniappe – 10:30 a.m. to 11:30 a.m.
Cincy Brass – 12:30 p.m. to 1:30 p.m.
Robin Lacy & DeZydeco – 1:45 p.m. to 2:45 p.m.
Ricky Nye – 3 p.m. to 4 p.m.

The crowning of the king and queen and Merchant Spirit contest winners will be announced between 11:30 a.m. and noon.

A parade around the market is at noon. There will be revelers enjoying lowland seafood boil and local beers beginning at 12:30 p.m.  Also, Friends of Findlay Market will distribute piles of free beads and baubles.

Findlay Market is located at 1801 Race St. in Over-the-Rhine.
