VEAL SALTIMBOCCA
 
Serves 4 persons
 
12 Toothpicks
12 Veal Cutlets
12 slices Proscuitto Ham
12 Sage Leaves
Flour - for Dredging (season with salt and pepper)
2 oz. Extra Virgin Olive Oil
 
1 Tsp. fresh Basil
1 Tsp. Fresh Oregano
1/2 Tsp. Minced Garlic
1/2 Cup White Wine
1/4 Stick Butter
 
Place 12 Cutlets on cutting board.  Place 1 sage leave on top of each cutlet.  Place 1 Proscuitto Slice atop the Sage Leaf.
 
Hold this together by sewing a Toothpick through the cutlets.
 
Dredge cutlets in seasoned flour.
 
Sauté the floured cutlets in 2 oz.of oil until golden brown
 
Pour oil from pan and deglaze with wine.
 
Add Garlic, Basil, Oregano & Butter
 
Simmer for 2 minutes and and pour liquid over cutlets.
 
Serve with Pasta or Roasted Potatoes.
