Final Cut's Spring Cobb Salad

The Final Cut Steakhouse is located in Hollywood Casino in Lawrenceburg. Chef Clendon Springer has the recipe to make the perfect spring salad at home, with seasonal flavors - The Spring Cobb Salad!

Spring Cobb Salad 

1 head romaine lettuce sliced thinly

1 head bibb lettuce torn into bite size pieces

3 roasted beets small diced

3 radishes sliced thinly

2 medium avocados diced small

3 hard boiled eggs quartered

4 ozs blue cheese crumbled

6 ozs bacon cooked and diced small

For the dressing:

1/2 cup white balsamic vinegar

1/2 tsp salt

1/2 tsp fresh ground pepper

2 tsp dijon mustard

1 clove garlic peeled and minced

2 Tbsp chopped fresh herbs

1/2 cup extra virgin olive oil

Prepare all salad ingredients and set aside for when you are ready to assemble the salad.

To make the dressing: combine all ingredients except olive oil in a bowl, using a whisk. Slowly whisk in olive oil to emulsify.

To assemble salad: lay down a bed of bibb lettuce, top with sliced romaine, then arranged remaining ingredients in neat rows on top of the lettuce.

Lightly drizzle the composed salad with dressing and serve extra on the side.
