-Hot and Spicy Pork Rind Chicken Wings
o 8 bags of Rudolph's Hot and Spicy Pork Rinds
o 3 lbs of fresh chicken wings
o 4 eggs
o Crush one bag of Rudolph's Pork Rinds at a time in your food processor until they are a fine crumb.
o Place the crumbs in bowl. In another bowl, beat 4 eggs.
o Dip the chicken wings in the eggs then coat with pork rind crumbs and fry until cooked.
o Remove and place on a paper towel to drain extra grease then layer them in a baking pan with your favorite hot sauce.
o Broil for 5 minutes to re-crisp and serve with blue cheese dressing and celery sticks.
-Guacamole Dip with Pork Rinds
o 1 bag of your favorite Rudolph's Pork Rinds
o 2 ripe avocados
o 4-5 green onions, chopped fine
o 1 small tomato, chopped fine
o 1 teaspoon lemon juice
o ¼ cup mayonnaise
o Salt and pepper to taste
o Dash of hot sauce, optional
o Mash avocados with a fork
o Add finely chopped green onions and tomatoes
o Blend with avocados
o Add mayonnaise, lemon juice, salt, pepper and hot sauce, mix well.
o Serve with Rudolph's Pork Rinds
