CINCINNATI, OH (FOX19) - Sushi was introduced in the United States shortly after the end of World War II and has grown in popularity ever since. There are plenty of delicious sushi restaurants to try locally, but have you ever thought about rolling your own at home?
D.J. Kang of Mr. Sushi will be on the FOX19 Morning News on Tuesday to show viewers how to make their own sushi.
But first you'll need to know some basics.
- The word "sushi" actually refers to the seasoned rice on which raw fish is served, not the fish itself.
- Makizushi is the most popular kind of sushi preparation and literally means "rolled sushi."
- Makisu is a thin bamboo mat used for rolling.
- Nori is a thin layer of seaweed that forms the sushi roll.
- Uramaki is a roll served with the rice on the outside.
For roll (makes four rolls):
1 medium avocado, peeled, pitted and sliced into quarter-inch pieces
2 sheets of nori
2 cups of sushi rice; recipe follows
1/3 cup sesame seeds, toasted
1 small cucumber, peeled, seeded and julienned into matchstick-sized slices
4 crab sticks – if using artificial crab you can leave them whole
Pickled ginger, wasabi and soy sauce to taste, for serving
For rice (makes four cups):
1 cup sushi or short grain rice
1 cup water, plus extra for rinsing rice
1 tablespoon rice vinegar
2 tablespoons sugar
1 tablespoon salt
.5 tablespoon squeezed lemon juice
To prepare the roll:
Cover a bamboo mat (makisu) with plastic wrap. Cut nori sheets in half crosswise. Lay one sheet of nori, shiny side down, on the plastic wrap.
Wet fingers with water and gently spread about ½ cup of prepared sushi rice evenly over the nori. Sprinkle the rice with sesame seeds, then gently turn the sheet of nori over so the rice side is on the bamboo mat.
Place cucumber, avocado and crab sticks in the center of the sheet. Grab the edge of the mat closest to you and roll nori into a tight cylinder, keeping ingredients in place with your fingers and using the mat to form the roll. Set mat aside.
Cut each roll into pieces. Serve with pickled ginger, wasabi and soy sauce as desired.
To prepare the rice:
After rinsing two to three times, place rice and water into a medium saucepan over high heat. Bring to a boil. Once rice begins to boil, reduce heat to low, cover saucepan with a tight-fitting lid, and cook for 15 minutes. Remove from heat and let stand, covered, for 10 minutes.
Combine rice vinegar, sugar, salt and lemon juice in a small bowl. Transfer cooked rice into bowl and stir gently to coat each grain of rice with mixture. Cool to room temperature before making sushi.
