Recipes: Taco potatoes, meatball sandwich & 7 cheese mac from Roxy's

Recipe for Taco Potatoes

  • 4 medium russet potatoes
  • 1 pound of ground beef
  • 1 teaspoon of season salt
  • 1 teaspoon of coarse ground pepper
  • 1/4 cup of taco seasoning 
  • 1/4 cup taco sauce
  • 1 cup of water
  • 1 cup of shredded mild cheddar cheese
  • 1 teaspoon of sour cream (optional)
  • 1 teaspoon of tomatoes (optional)

Bake potatoes in oven on 350 degrees for 45 minutes

brown ground beef add season salt and pepper

Drain the meat and return meat to pan add taco seasoning and water mix well.

After the potatoes are done (fork tender) slice and taco mixture 

Top with taco sauce and shredder cheese and sour cream and tomatoes.

Recipe for Meatball Hoagie Sandwich

  • 1 pound of ground beef
  • 1/2 green pepper diced
  • 1/2 sweet onion diced
  • 1 table spoon of season salt
  • 1 table spoon of coarse ground pepper
  • 1 table spoon of garlic pepper
  • 2 eggs
  • 2 slices of provolone cheese
  • 4 hoagie buns
  • 1 cup of BBq sauce

In a large mixing bowl add ground beef, eggs,green peppers, onions, and seasonings mix. 

Roll into 3/4 size meatballs and bake in oven on 350 for 45 minutes covered until well done.

Drain grease and return to pan add BBq sauce and heat for 10 minutes.

Toast hoagie bun add 2 slices of provolone cheese and add three meatballs with BBq sauce and slice in half.

Recipe for 7 cheese mac

  • 1 medium casserole dish
  • 1 1/2 bags of elbow macaroni 
  • 1/2 cup of whole milk
  • 1 stick of margarine
  • 2 eggs
  • 1/2 cup of Velveeta cheese
  • 1/2 cup of cheddar cheese
  • 1/2 cup of sharp cheddar cheese
  • 1/2 cup of colby cheese
  • 1/2 cup parmesan cheese
  • 1/2 cup of mozzarella cheese
  • 1/2 cup of Monterrey Jack
  • 1/2 teaspoon of salt (optional)

Bowl water to rapid bowl add elbow macaroni noodles for about 10 minutes.

Drain water pour to a large mixing bowl add butter, eggs, margarine, salt and Velveeta cheese and mix well.

Pour half mixture to casserole dish and add half of all the cheeses. Mix well then add rest of noodles and top with remaining cheese and bake in oven on 350 degrees for 30 to 35 minutes covered with non stick foil. take foil off and bake for 10 additional minutes until cheese melted well and noodles crisp. Take out and let it sit for 10 minutes before serving.
