Shepherd’s Pie


Serves 6


3 Leftover mashed potatoes

1½ Tbsp olive oil

3 Cups leftover turkey, chopped

1½ Cups leftover vegetables, chopped

1½ Cups gravy

1 Egg, lightly beaten with 1 Tbsp water


1.     Perheat oven to 400°.  Bring leftover potatoes to room temperature and mix with olive oil.


2.     Oil an 8” X 8” baking dish.  Spread half of potato mixture in bottom of baking dish.  In separate mixing bowl, combine turkey, vegetables, and gravy.  Spread turkey mixture over mashed potatoes.  Top with remaining potato mixture, covering turkey mixture.  Brush top layer with egg wash.


3.     Bake for 30 minutes, until potatoes are browned and pie is hot in the center.  Rest briefly and serve.
