These cheesy mashed potatoes courtesy of FOX19 NOW's Megan O'Rourke are sure to be a hit at your Thanksgiving Day feast!
Cheesy mashed potatoes
2 cups Yukon gold potatoes (peeled and cubed)
4 Tbs. very cold butter
1 ¾ cups grated cheddar (Fontina, mozzarella or Gruyere also work well)
½ cup warm milk, salt and pepper
2/3 cup sour cream
1 clove of garlic, minced
Cook the chunks of potato and minced garlic in salted boiling water until tender. Approximately 20 min.
Drain, return potatoes with garlic to the pot and mash with a potato masher.
Turn heat on low, stirring for 2 minutes.
Take off the heat and add butter a little at a time.
Slowly stir in warm milk until potatoes are smooth.
Turn heat on low and add cheese, salt and pepper.
Continue to stir for up to 10 minutes or until all the cheese is melted.
