Recipe for Morton's chocolate cake

This recipe for rich chocolate cake from Morton's the Steakhouse will be hit on Valentine's Day or any other occasion! Courtesy Chef Mark Deaton.

Morton's Chocolate Cake Recipe (15 individual cakes)

Cake ingredients:

Butter, bulk, unsalted, to coat

Sugar, granulated, to sprinkle

Chocolate, Callebaut 21 oz.

Butter, bulk, unsalted 21 oz.

Godiva Chocolate Liquor 1/8 oz.

Eggs, yolks, pasteurized 1 cup

Eggs, whole, pasteurized 2 1/2 cup

Sugar, powdered 21 oz.

Flour 10 1/2 oz.

Icing recipe:

Powdered sugar approx. 1 tsp.

Caramel topping approx. 1 1/2 oz.

Raspberries 3 per individual cake (or preference)

Mint 1 leaf

Vanilla ice cream scoop per individual cake (or preference)


Generously butter and sugar 8 ounce souffle cups.

Melt chocolate and butter over heat until liquid.

Add Godiva Chocolate Liquor

Place egg yolks and whole eggs in mixing bowl.

Beat on low speed for approximately 2 minutes while pouring in melted chocolate into egg mixture.

Place powdered sugar and flour into strainer.

Mix ingredients at high speed for approximately 45 seconds.

Using a rubber spatula, pour cake mixture into souffle cups.

Place cake into 350 degree oven and cook for 20 minutes.

While the cake is baking, warm the caramel sauce in a medium sauce pan until heated.

Remove cake from oven and lightly dust top of cake with powdered sugar.

Add desired amount of raspberries, mint, caramel sauce and ice cream
