Recipe: Baked five cheese Angus ravioli from Alfio's Buon Cibo

Baked Five Cheese Angus Ravioli

Ingredients:

  • 500 gr flour
  • 5 xl eggs
  • 2 tablespoon olive oil
  • 1 lb. angus beef
  • 3 cups marinara
  • 1 cup alfredo sauce
  • 1 cup asiago cheeses
  • ¼ cup mascarpone
  • 2 basil leaves
  • ¼ cup red wine
  • 1 cup of mixed cheeses

Preparation:

In a bowl, combine the eggs, the flour and the olive oil until dough is form and set in the cooler. In a small braising pan, sear both sides of the ribeye, deglaze the pan with red wine and add 2 cups of marinara. Cover the pan and cook in a 350 degree-oven for four hours.

In a bowl, combine the meat, mascarpone, asiago and basil. With a pasta machine, roll your dough until ravioli forms, stuff the ravioli and cook in boiling water.

In an oven pan, set the rest of marinara sauce on the bottom followed by the ravioli. Top them with the Alfredo and the mix cheese and bake at 350 degrees till golden brown.
