Recipe: Prosciutto and Pesto Panini from The Suburban Chef

Suburban Chef Barbie Han slipped into our FOX19 NOW Morning News kitchen Tuesday to whip up these Prosciutto and Pesto Panini in celebration of National Cold Cut Day.

It's a nice upgrade for a family dinner on soup and sandwich night!

Ingredients

Ciabatta rolls or other good bread

Pesto

Provolone cheese

Roasted red peppers

Proscuitto-1/3 pound

Arugula

Preparation

Cut open the Ciabatta rolls and spread pesto on inside of both sides of the rolls.

Place one piece of provolone, followed by two pieces of prosciutto and then roasted red pepper strips, than a handful of arugula.

Brush the outside of the roll with olive oil and sprinkle with oregano and coarse salt.

Place on a grill pan and weigh down with another cast iron pan.

Flip over and rotate to get fun grill marks on both sides of the sandwich.
