Recipe: Vanilla lemon cheesecake bars

These vanilla lemon cheesecake bars are the perfect springtime sweet.

  • 1 package Oreo Cookies (not Double-Stuff), any flavor


  • 24 ounces cream cheese, softened (3 packages)

  • 1 ½ cups sugar

  • 3 eggs

  • 3-4 tbsp sour cream

  • 2 tsp. vanilla extract

  • 2 tsp. lemon juice

  • 3 tbsp flour

  • Food color, your choice


  • Preheat oven to 325 degrees. butter a 9 x 13 pan, line with parchment paper, and butter the parchment paper.
  •  In a food processor, pulse one package of cookies, including the filling until you have crumbs that resemble sand. Pour into pan and press firmly. Place pan in freezer for approximately 10-15 minutes.

  • In a large bowl or stand mixer, beat cream cheese for about 1 minute. Add sugar and beat for 2 minutes.

  • Add eggs, sour cream, and flour and beat until combined.
  • Spread half of the batter into your prepared pan.
  • Split the remaining batter evenly between 2 bowls. Add your choice of food color to each bowl; mix each separately until combined.

  • Spoon colored batter on top of batter in prepared pan, in shape that you would like. When complete, use a knife to swirl colors to your preference

  • Bake for 40 minutes.  Let cool on cookie rack for about an hour and a half.  Refrigerate for approximately 3-4 hours.
Makes 12-24 bars
