Grilled Pork Tenderloin with Spaghetti Squash, Tomatoes, Spinach, and Parmesan Cheese
Preheat grill to medium high heat, or an oven to 375 degrees.
Cut the spaghetti squash in half and season to taste with salt and pepper and olive oil. Place on grill and cook 20-25 minutes, until tender. If doing cooking in the oven, season the same way and roast for 25-30 minutes until tender. Let cool for 10 minutes or cool enough to handle and scoop out squash into a bowl. Then all the can of tomatoes and ½ bag of fresh spinach and ½ cup of parmesan cheese.
While squash is grilling or roasting, take your pre-seasoned pork tenderloin and let it come to room temperature. Once room temperature you can grill or roast the pork tenderloin until 145 degrees. Let rest for 5-10 minutes then slice.
Place spaghetti squash mixture down on plate, top with sliced pork tenderloin and remaining parmesan cheese and enjoy!
