RECIPE: Five ingredient meals

Grilled Pork Tenderloin with Spaghetti Squash, Tomatoes, Spinach, and Parmesan Cheese

Serves: 4


  •  1 whole pork tenderloin, seasoned
  •  1 whole spaghetti squash
  •  1 can fire roasted tomatoes
  •  1 bag spinach
  •  1 cup shaved parmesan cheese
  •  Salt and pepper to taste
  •  Olive oil to taste


  • Preheat grill to medium high heat, or an oven to 375 degrees.

  • Cut the spaghetti squash in half and season to taste with salt and pepper and olive oil. Place on grill and cook 20-25 minutes, until tender. If doing cooking in the oven, season the same way and roast for 25-30 minutes until tender. Let cool for 10 minutes or cool enough to handle and scoop out squash into a bowl. Then all the can of tomatoes and ½ bag of fresh spinach and ½ cup of parmesan cheese.

  • While squash is grilling or roasting, take your pre-seasoned pork tenderloin and let it come to room temperature. Once room temperature you can grill or roast the pork tenderloin until 145 degrees. Let rest for 5-10 minutes then slice.

  • Place spaghetti squash mixture down on plate, top with sliced pork tenderloin and remaining parmesan cheese and enjoy!
