Swineapple: The meat-pineapple hybrid taking the internet by storm

Butcher Betties' Swineapple Butcher Betties' Swineapple

The 'Swineapple' is a hollowed pineapple stuffed with ribs and wrapped in bacon.

It's a dish that took the internet by storm thanks to a Facebook user who recently posted a photo of the creation. The photo spread, but the recipe remained a mystery.

The pros at Butcher Betties have come to the rescue with their own Swineapple recipe. For similar recipes, check out the Choice Cuisine blog.

Ingredients

1 Large Pineapple (Larger the better)

12 slices good quality bacon

5/6 Boneless Pork Ribs

1 Jar Captain Rodney Toucan Glaze

1 Jar Brosmore pineapple pepper jelly

Method

Heat oven to 180 degrees. (Or use a BBQ Smoker if you have one)

Peel the pineapple, cut off one end (do not discard) and carefully hollow out the center leaving an outer edge of approx 1" thickness.

Coat boneless ribs lightly with pineapple jelly.

Stuff the hollowed out pineapple with the boneless pork ribs, pack them in as tight as you can!

Carefully position the pineapple end you saved earlier back onto the end of the pineapple.

Wrap the pineapple/ribs with the slices of bacon, you can pin them in place with toothpicks if necessary or tie with butchers twine.

Generously smother the "Swineapple" with the bottle of Captain Rodneys.

Place in the pre-heated oven/ BBQ smoker for 4 1/2 - 5 hours.

Cook until internal temperature is 140 degrees. Let rest for 10 minutes before slicing.

Serve with rice and a green vegetable such as broccoli or asparagus for a beautiful plate.

Slice and enjoy!

Butcher Betties is located in the Friendly Market in Florence, Kentucky.
