Recipe: Watermelon Firework Cake

Beth Robeson, author of The Making of a Picky Eater, shares fun and creative ways to change those choice eating habits. 

Here's her recipe for a Watermelon Firework Cake - it's a perfect way to involve the kids in the kitchen!

Ingredients: 

1 large watermelon (preferable seedless)

1 star fruit sliced in thick slices that look like stars (if available)

Any assortment of the following for decorations:

Blueberries

Blackberries

Raspberries

Fresh, pitted bing cherries cut in half

Sliced apricot

Grapes

You'll also need some wooden shish kebob skewers.

Steps

1. Make the cake rounds: Slice the watermelon into two big rounds the shape of a round layer of cake.

2. Remove the rind.

3. Stack the rounds to form a cake.

4. Decorate the top and sides with the fruit using toothpicks and wooden shish kebab skewers to attach them. If you use different sized skewers you can get the effect of a burst of fire works coming out of the top of the cake.

5. Enjoy!
