That's all it takes to make these brownies – and you won't feel guilty about eating them!
Healthy almond butter provides a rich taste, cocoa powder brings antioxidants and the dates are high in fiber with loads of vitamins and minerals.
Here's the recipe for the three minute, three ingredient brownies from Beth Roberson, author of The Making of a Picky Eater.
8 Fresh Majol Dates, pitted.
1/2 Cup cocoa powder
1/2 Cup high quality raw almond butter
Mix the dates and the cocoa powder in a food processor until small crumbs form.
Add the almond butter and blend till dough is well combined, but not mushy.
This dough should stick together if pressed with the fingers so you can form it into little brownies. Add more almond butter if needed. I use a cookie dough scoop, that forms the brownies into a little ball and pops the dough out onto the plate when you squeeze the handle.
Take care when forming the brownies that you don't pack them down too much. You want them to have a light cake like feel. Done!
Here are some fun additions if you want to fancy it up a bit:
1. Orange Pecan Brownies: just add some freshly grated organic orange rind and some chopped pecans.
2. Walnut & Chocolate Chip: just add chopped walnuts and raw cocoa nibs.
3. Rosemary, Sea Salt and Almond: add chopped fresh rosemary, and top the brownies with chopped almonds and a little sea salt. These are mind blowing! The savory flavor of the rosemary combined with the earthy taste of the salt and almonds has to be one of the most amazing combinations ever created.
4. Mint Chocolate Chip Brownies: Add a little mint extract to the batter as you blend it in the food processor. Toss in some cocoa nibs or chocolate chips.
