Recipe: Moo-Oink "Moink" Balls

2 lbs ground beef
1 lb Italian sausage
1 lb regular cut bacon
Your favorite dry rub
Your favorite bbq sauce

Yield: About 30 meatballs; Prep: 1/2 hour; Cook: 1/2 hour

1. Mix together ground beef and sausage. Roll into 1.5 oz meatballs.
2. Remove bacon from package and cut slab in half yielding about 32 half strips of bacon.
3. Lay bacon slice in hand and place meatball in center. Wrap bacon around meatball and secure with toothpick.
4. Season each bacon wrapped meatball with dry rub evenly on all sides. Place in aluminum tray and place in fridge.
5. Light your charcoal (recommended) or gas grill using the "indirect cooking method".
6. Depending on your type of grill add wood chunks or chips (no soaking) to your fire.
7. Place meatballs on cool side and cook until internal temp is around 150 degrees.
8. Move meatballs to hot side of grill to crisp up bacon.
9. Baste meatballs with bbq sauce and flip often until coated moving meatballs back to cool side as finished.
