Recipe: Winning Tex-Mex Chili

‘Tis the season for tailgate parties! Whether you’re tailgating at the game or have friends and family over, this Tex-Mex Chili is a winner every time.  It’s packed full of flavor, can be made ahead of time and is a real crowd pleaser.  Set out the Chili with a “Topping Bar” and no one will go away unsatisfied.

What you'll need:

  1 ½  lbs. Fresh Chorizo Sausage
  1 ½ lbs. Ground Chuck
  1  Large Onion, chopped  (approx. 2 cups)
  3  Cloves of Garlic, minced
  1  28 oz. can of Crushed Tomatoes
  2  14 1/2 oz. cans of diced Mexican Tomatoes
  2  4 oz. cans of Chopped Green Chilies
  1  15 oz. can of Pinto Beans, drained and rinsed
  1  28 oz. can of Black Beans, drained and rinsed
  1  12 oz. bottle of Beer, broth or water
  2-3  Hot Chili Peppers, chopped (optional)**
  1 Tab.  Chili Powder*
  1 Tab.  Ground Cumin
  2 Teas. Oregano, dried, crushed
  1 Teas. Majoram, dried, crushed
  1/2 Teas. Paprika
  1/2 Teas. Cayenne*
  1 Teas. Salt or to taste
  1/2 Teas. Freshly ground pepper or to taste


Brown sausage, ground chuck, chopped onion, and garlic in a large, heavy saucepan over medium-high heat until meat is browned.  Drain off any excess fat.

Add remaining ingredients to the meat mixture.  Stir well and bring to a boil.  Reduce heat, cover, and simmer for 30 minutes.  Taste chili and adjust seasonings. 

Depending on how hot you like your chili, keep in mind that the Chorizo sausage is a spicy Mexican sausage and the Mexican tomatoes also include hot peppers, so you may NOT want to add the hot chili peppers – you may want to serve them as a garnish for your “spicy” friends to add to their individual bowls.

Shredded Cheese
Sliced Green Onions
Chopped Hot Peppers
Sour Cream
Tortilla Strips or Crushed Tortilla Chips
