Recipe: Pumpkin sheet cake with cream cheese frosting

What's the autumn season without pumpkin? Everyone's favorite fall flavor shines in this simple, delicious sheet cake with cream cheese frosting. Check out the recipe from the Miller Haus - an Amish country bed and breakfast in Millersburg, Ohio.

What you'll need:

2 c. Libby’s canned pumpkin 
2 c. sugar
1 c. vegetable oil
4 eggs
2 c. all-purpose flour
2 t. baking soda
1 t. cinnamon
½ t. salt


4 oz. cream cheese, softened
5 T. butter, softened
1 t. vanilla
1-3/4 c. powdered sugar
3-4 T. milk


In a mixing bowl, beat pumpkin, sugar and oil. Add eggs; mix well. Combine flour, baking soda, cinnamon and salt. Add flour mixture to pumpkin mixture and beat until well blended.

Pour into lightly greased 11x15 jelly roll pan. Bake at 350 for 30-35 minutes.

For frosting, beat cream cheese, butter and vanilla until smooth. Gradually add powdered sugar, mix well. Add milk to frosting until desired consistency.

Frost cake and enjoy!
