There is a variety of apple to suit every palate during the fall season - Sweet, tart, crisp, crunchy.
Pick your favorite or use the traditional honey crisp for in this Autumn Apple Delight recipe from Suburban chef Barbie Hahn.
What you'll need:
1 package Puff Pastry thawed 3 large Honeycrisp apples peeled and sliced into thin pieces and then cut in half, mix 1 tsp lemon juice to prevent browning 3 T Brown sugar 3 T raw sugar 1 tsp cornstarch dash cinnamon dash nutmeg 2 T butter divided into 6 pieces 1 egg beaten
Preheat oven to 375 degrees
Spray jumbo muffin tin with cooking spray
Lay puff pastry of floured surface. Cut each piece of puff pastry into 4 squares.
Fill each of 6 muffin tins with 1 piece of puff pastry. Save remaining 2 pieces for another use. With pastry brush, brush inside of each piece of puff pastry. This prevents the bottom of the puff pastry from getting soggy when the apples release their juices. '
In medium bowl mix apple pieces with sugars, cornstarch and cinnamon and nutmeg until all apple pieces are coated.
You can add nuts or cranberries or raisins if you like to give the delights some variety. Or you can go with lovely plain delights.
Spoon apple mixture into all six of the puff pastry. Try to make them similar in size so they cook the same.
Dot with one piece of the butter. Sprinkle the tops with extra sugar, if desired.
Bake for 20-25 minutes.
Let cool for 5 minutes before removing from pan. Drizzle with caramel sauce or a scoop of ice cream for a wonderful fall treat!
