Recipe: Bacon wrapped dates

The Kenton County Library hosts a free cooking class on Dec. 10 at 1 p.m. Participants will learn how to make these bacon-wrapped dates and more. 

What you'll need:

-1 lb of bacon (pork, turkey, duck)
-25 medjool dates
-1/3 cup ricotta cheese
-4 oz soft goat cheese
-(optional) 2 sprigs of rosemary

Instructions:

Preheat oven to 450 degrees.

Cut bacon in half lengthwise to create double the strips of bacon.

To pit dates, cut the top end off of each date.  Push out the pit with a bamboo skewer or pick out with a tooth pick.

Mix ricotta and goat cheese until combined.  Place into bottom corner of a strong sealable plastic bag.  Cut tip of opposite corner off to turn bag into a piping bag.

Fill each date with the cheese mixture.  (Optional: stick 1-3 leaves of rosemary into each date)

Lay out a strip of bacon and roll the date up into the bacon.  Seal with a toothpick.  Repeat with remaining dates.

Place dates on a rimmed baking sheet covered with foil or parchment paper; dates should be spaced about an inch apart.  Roast dates for 10 minutes, remove from oven and flip.  Continue to roast for another 5-10 minutes or until bacon has crisped a bit and dates have browned.

Remove from oven, carefully remove toothpicks.  Serve immediately.
