Recipe: Seven Up Cake

Seven Up Cake: A Scrumptious Traditional Southern Pound Cake

Preheat oven to 325 degrees.

Utensils needed:

  • Large mixing bowl
  • Wood and rubber mixing spatula
  • Non-stick flour spray for baking,
  • Large Bundt cake pan


  • 3 cups sugar
  • 3 cups cake flour (I recommend Swanson)
  • 3/4 of a cup of 7 Up (may use any similar Lemon Lime soda pop)
  • 1 tsp. pure vanilla flavoring (may substitute imitation vanilla, if desired)
  • 2 tsp. pure lemon extract flavoring
  • 3 tsp. pure coconut extract flavoring
  • 3 sticks of softened butter
  • 5 eggs


  • First combine flour and sugar in a mixing bowl. 
  • Add 7 Up to the flour and sugar mixture, stirring with spatula, scraping sides frequently, to make sure ingredients are mixing evenly.
  • Add eggs, softened butter, vanilla, lemon and coconut flavorings. Mix until cake batter is smooth.
  • Spray Bundt pan evenly with non-stick flour spray (Baker’s Joy spray recommended).
  • Pour batter evenly into pan.
  • Bake at 325 degrees for one hour, or until butter knife inserted in top of cake, comes out with just crumbs, no batter on it. Enjoy!
