Recipe: Chicken Soft Tacos

Chicken Soft Tacos by Sound Bites

If you’ve never used soft corn tortillas for tacos, now’s the time.  Lower in calories and ingredients than flour tortillas, corn tortillas provide a healthy, gluten-free option to your menu.  To boost fiber content, add shredded cabbage, chopped cucumbers or fresh tomatoes.  Lean ground beef or black beans may be used in place of chicken.  Ole’!


  • 2 cups cooked chicken, shredded
  • 1 tsp. garlic powder
  • 1 tsp. dried oregano
  • 1 tsp. cumin
  • ½ tsp. seasoned salt
  • 1 cup prepared salsa
  • 8 corn tortillas
  • ½  cup shredded cheddar cheese
  • ½ cucumber, chopped


In a small bowl, place chicken, garlic powder, oregano, cumin and seasoned salt together and blend well.

Place 2 Tbsp. chicken in a corn tortilla.  Add 2 Tbsp. salsa, 1 Tbsp. cucumber and 1 Tbsp. shredded cheese and serve.
