Southern Crab Cakes and Smoked Paprika Remoulade

FOX19 - You don't have to go to the French Quarter to celebrate Mardi Gras. Chef Renee Schuler of Eat Well shared this crab cake recipe you can make at home for your Mardi Gras festivities.

What you'll need

1 Tablespoon butter

1 Scallions, minced

1 Rib celery, minced

2 Whole ggs plus

¾ cup Panko

½ Tablespoon Old Bay seasoning

¼ - ½ cup Mayonnaise

3 Egg whites

1# Crab, jumbo lump

1 cup Canola or vegetable oil



35 - 40 bite-sized cakes


1. Sauté scallions and celery just until soft in butter

2. Make panade with, 2 eggs, panko and ¼ mayo. Let sit.

3. Add veggies to egg mix with Old Bay, and a pinch of salt

4. Fold in crab, add extra mayonnaise as needed

5. Whip 3 egg whites to soft peaks, fold into crab

6. Heat a high sided skillet with 1 inch of oil

7. scoop teaspoonfuls into panko, roll to coat, then shallow pan fry in canola

8. gently remove place on paper towel lined plate or sheet pan,, sprinkle with sea salt and repeat until mixture is gone, Keep warm in 200 oven, until ready to serve, or, chill then reheat in 375 degree convection oven until crisp and sizzling. Serve with Smoked Paprika Remoulade.

Smoked paprika remoulade

What you'll need

1 cup Mayo

1 Tablespoon Lemon Juice

1 teaspoon Smoked Paprika

½ teaspoon Ground Cumin

2 teaspoons Tomato Paste

½ teaspoon Salt

½ teaspoon Chipotle Puree

Yield: a little over 1 cup


1. whisk all ingredients together. Keeps refrigerated for up to one week
