When I think of comfort foods, I think of chicken and dumplings. My grandma used to slave over making homemade dumplings, but these days who has time. I found a quick way to feed the family without slaving. It still takes me back to when grandma made it.
- 4 – 6 Chicken Breast (bone in or boneless)
- ¼ tsp. Poultry Seasoning
- ¼ tsp. Paprika
- ¼ tsp. Pepper
- 2 cans Cream of Chicken Soup
- 1 can of water
- 1 can (small) Chicken Broth
- 2 cans of biscuits
I use crockpot bags to help keep the cleanup down.
Lay the chicken breast in the bottom of the Crockpot (in bag if you use them)
In separate bowl mix together, the soup, water, broth and spices; stir until mixed
Pour the mixture over the chicken and cook on high for 6 hrs.
After 5 hours pull chicken out and cut into chunks or shed add back to crockpot.
Cut the biscuits into chunks and d rop them on top, let cook until the biscuit chunks are fluffy, not doughy.
Cook chicken in large pot with the chicken broth/cook thoroughly on medium heat .
Remove the chicken and cut into chunks, put back in pot on low to medium heat.
In separate bowl mix together, the soup, water, and spices, stir until mixed.
Pour the mixture over the chicken let cook for 25 minutes/ stirring occasionally.
