Yep, we’re talking about goetta.
The meaty German-American breakfast food can be mimicked in this vegan recipe from Wellmann’s Brands.
Here’s how to make your own vegan goetta at home:
Heat one half cup oil blend in a wide stainless steel pot & Saute:
5 chopped yellow onions
1/8 cup ground sage
1/8 cup ground rosemary
1/4 cup cafe ground blk pepper
1/2 cup chopped garlic
1/8 nutritional yeast
1T cocoa powder
1T red pepper flakes
1/4 cup sugar
Deglaze with 1/4 cup sherry
Blend mixture in food processor until smooth with:
1 cup walnuts
1 blocks drained firm tofu
Heat the stock til lightly boiling & add the oats & bulgar wheat:
2 quarts vegetable stock
6 cups steel cut oats
4 cups bulgar wheat
Cook until it's a very thick porridge without burning the bottom. Remove from heat & fold in the processed mixture. Pour the well incorporated mixture into a shallow baking pan & allow to cool & become firm overnight.
Allow to chill overnight, or at least until very firm like - regular goetta.
Form into patties and baked at 350 on a well-oiled sheet pan for 20-25 minutes. You can also fry the patties about 4 minutes on each side over medium heat with a non stick or well oiled skillet.
