Belterra Park: Corned Beef Hash

Many would consider Corned Beef Hash a staple on St. Patrick’s Day and Stadium Sports Bar & Grill at Belterra Park Gaming is serving it up all day long to celebrate the holiday.

Executive Sous Chef Craig Schmidt shared their recipe on FOX19 NOW Thursday morning.

Corned Beef Hash –serves 8

2 Tbsp. whole butter     

1 large onion, diced   

6 Russet or Yukon Gold potatoes

1 ½ pound corned beef, finely diced, ground or cubed depending on preference

½ cup shredded carrot

Salt and pepper to Taste


Begin by peeling and quartering two of the six potatoes.

Boil in salted water until tender and then mash them. 

Set aside. Next, dice the remaining potatoes and simmer in salted water until firm but tender.

Meanwhile, in a sauté pan, cook the onions until translucent. Combine the diced meat, diced potatoes and onions. Adding shredded carrots is optional but, do so at this time. Using the mashed potatoes as a binder, mix all ingredients together and season. Brown well prior to serving.
