Bourbon glazed carrots with orange zest

I like this carrot dish year round, but it’s particularly good with Easter ham and Thanksgiving turkey! 

Bourbon Glazed Carrots with Orange Zest from Amy Tobin:

What's Needed:

2 pounds  multicolored carrots, peeled, small amount of greenery left

1/4 cup brown sugar

1/4 cup softened butter

2 tablespoons bourbon

zest of 1 orange

salt and black pepper to taste

Instructions:

Place carrots in a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender yet firm to the bite, about 10 minutes. Drain.

Combine brown sugar, butter, and bourbon together in a saucepan; bring to a boil. Reduce heat and cook and stir sauce until thickened, about 10 minutes.

Add carrots and toss to coat.
Transfer to a serving dish. Scatter orange zest over top.

Serve!
