French Cuisine: Kara's 1st Cooking Class

NORWOOD, OH (FOX19) -

I don’t pretend to know my way around a kitchen and I’m comfortable letting my husband do most of the cooking; but my best friend Emily came to visit Cincinnati so I decided to try something new (2016 mantra) and take my 1st cooking class.

We signed up for Sur la table’s French cuisine one evening in Rookwood Commons, I was feeling ambitious!

The class was touted as a hands on approach to cooking an extensive French menu including: fig tapenade, roast chicken, asparagus salad (with poached egg) and a soufflé for dessert.

The two and a half hour class started with a quick knife demonstration then we got our hands dirty.

We worked in groups of four and while the class can hold up to sixteen people there were only eight registered that evening.

The kitchen is located in the back of the retail store and boasts the latest appliances and utensils (clearly) including an egg separator that sucks out the yolk when preparing egg whites. Full disclosure: I bought one of those!

The recipes seemed advanced but with the chef’s guidance and thoughtful approach I found them to be easy to follow. With the exception of the chocolate ganache for the soufflé and toasting the crostini Emily and I made everything on the menu.

My favorite part of the class was poaching an egg, our instructor demonstrated how to create a vortex in the simmering water before cracking the egg in the center of the pot, the circling motion helps keep the egg white together (this was news to me!)

This class cost $80 per person and while it wasn’t cheap there are more affordable classes and we ate everything we prepared.

FYI: I called Sur la table prior to attending the class to see if I could bring wine and was told no but when I arrived most people had brought a bottle and glasses and the instructor said it was fine so, I plan to bring Pinot Noir next
time.
