Chicken salad with a twist! Our friends at The Miller Haus shared this recipe for Chicken Curry Salad.
What you'll need:
1-1/2 lbs. boneless, skinless chicken breast, grilled and cooled 3/4 cup mayonnaise 1/2 cup plain greek yogurt 3 teaspoons curry powder 1 Tablespoon fresh lime juice 1/2 teaspoon ginger 1/2 teaspoon salt 1/2 teaspoon black pepper 1 cup purple onion, chopped 2 Tablespoons mango chutney OR 1 fresh mango, diced 1 crisp apple, chopped 1/2 cup slivered almonds
Grill chicken and allow to cool. Chop into 1/2 inch pieces.
While chicken is cooling, whisk together mayonnaise, yogurt, curry, lime juice, ginger, salt and pepper in a bowl. In a separate larger bowl, combine chicken, onion, mango, apple and slivered almonds. Combine both bowls and fold together until mixed well. Serve on a fresh bed of crisp, fresh lettuce.
