Derby Party Staple: Benedictine recipe

It’s considered a quintessential dish to serve at any Kentucky Derby party, the ladies at Erlanger Branch Library made Benedictine in the FOX19 NOW studio to kickoff race season. Here their recipe:

Recipe: Benedictine

  • 1 cucumber, peeled, seeded and coarsely grated
  • 8 ounces cream cheese, softened
  • 2 tablespoons grated onion
  • ½ teaspoon salt
  • 1 tablespoon mayonnaise
  • ¼ teaspoon freshly ground pepper
  • 2 tablespoons fresh dill, chopped
  • A few drops green food coloring (optional)

Remove excess water from cucumber by squeezing with paper towels. This is a very important step. In the bowl of a food processor, fitted with a metal blade, combine the cucumber, cream cheese, onion, salt, mayonnaise, and black pepper.

Process until smooth and transfer to a mixing bowl. Add the fresh dill. Taste and adjust seasonings, if necessary.

Add 1-2 drops of green food coloring, if desired.
