Recipe: Orange Avocado Salad, Peach Bourbon Glazed Scallops & Shrimp

Chart House is highlighting of the ‘Flavors of Spring’  with an Orange Avocado Salad, Peach Bourbon Glazed Scallops & Shrimp. These crowd-pleasing menu items will be available until early May.  We’ve included the recipe below if you want to try to make the dishes yourself.

RECIPES

Peach & Bourbon Scallops and Shrimp

  • 3 u-10 Scallops
  • 3 16/20 shrimp

Peach & Bourbon Glaze

  • 1.5 #s peaches
  • 1 cup bourbon
  • 1 cup granulated Sugar
  • 3/4 cup apple cider vinegar
  • 1oz (w) butter
  • 1oz (w) shallot
  • 1 tsp. jalapeno

Skillet Fried Corn

  • 5 oz (w) Bacon
  • 3 oz (w) yellow onions
  • 1 Tbsp. minced garlic
  • 1 Qt fresh corn shucked
  • 1/2 cup Heavy Cream
  • 8 oz (w) asparagus
  • 5 oz (w) grape tomatoes
  • 3 oz (w) Roasted Red pepper
  • 1 Tbsp. Chopped Parsley

Orange Avocado Salad

  • 2 oz (w) spring mix
  • 3 sliced rounds of blood orange
  • 2 sliced rounds of navel orange
  • 1/2 avocado
  • 2 oz (w) sliced strawberries
  • 1/2 oz (w) Red onion julienne
  • 1 oz (v) passion fruit vinaigrette
  • 1 oz (w) crumbled goat cheese
  • 1/2 oz (w) prosciutto crisps
  • Drizzle of basil oil
