Watershed Distillery: Flower Power Ice Tea

Since it’s Earth Day on Friday Watershed Distillery decided to do a floral iced tea using edible flowers and microgreens from Waterfields LLC a Cincinnati based company that grows and provides job in the urban core.

Waterfields grows about 30 varietals of greens, such as pea tendrils, shiso and red cumin, inside their hydroponic house called “the bubble,” which takes up only 1/10th of an acre of square footage. To compare, an average American farm is 434 acres, and a small family farm is about 231 acres.

Using hydroponics, Waterfields can produce more food in a smaller space without taking up land.


  • 8 cups of water
  • 10 green tea bags
  • 2 cups of sugar
  • 1 cup of fresh edible flowers or ½ cup dried flowers such as hibiscus
  • 1 cup basil

 In a large pot over high heat add water, bring mixture up to a boil. Reduce heat and add sugar, once sugar has dissolved add tea bags, flowers, and basil.  Simmer for 20 minutes.  Allow mixture to cool and then strain into a pitcher.


  • 1 ½ oz Watershed 4 Peel Gin or Watershed Bourbon Barrel Aged Gin
  • 4 oz Flower Power Tea

Add all ingredients to a shaker tin, shake well and strain into a Collins glass. For a crowd change the ounces to cups and mix up in a pitcher. Garnish with edible flowers, and basil leaves.
