Recipe: Light as a feather cornbread

2 eggs, beaten

½ c. butter, melted

1 c. buttermilk

1 c. cream style corn

1 c. cornmeal

1/3 c. flour

2 Tablespoons sugar

1 teaspoon salt

2 teaspoons baking powder

½ teaspoon soda


With a wire whisk beat together buttermilk and eggs. Add the rest of the ingredients, the melted butter being last. Pour into greased 10" inch iron skillet or 9" inch square pan. Bake at 350 for 35 minutes. Serve warm with soft butter.
